🛒 Ingredients

  • 1 1/3 cups unsalted butter, softened
  • 2 cups granulated sugar
  • 2 large eggs
  • 2 tsp key lime zest
  • 1/2 cup fresh key lime juice
  • 1 tsp vanilla extract
  • 5 cups all-purpose flour
  • 1 tbsp baking powder

  • 2 cups powdered sugar
  • 2–3 tbsp fresh key lime juice
  • Extra key lime zest (for topping)

🍳 Equipment

  • Stand mixer or electric hand mixer
  • Baking sheets
  • Parchment paper
  • #24 cookie scoop (approx. 3 tbsp)
  • Wire cooling rack

📋 Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixer bowl, cream softened butter and granulated sugar together until light and fluffy.
  3. Beat in eggs one at a time, then add lime zest, lime juice, and vanilla extract; mix thoroughly.
  4. Gradually mix in flour and baking powder until a uniform dough forms, scraping down the sides as needed.
  5. Scoop dough using a #24 scoop into balls, place on baking sheets, and press gently with your fingers to flatten to about 1/2-inch thickness.
  6. Bake for 10 minutes until bottoms are lightly browned and edges are set (tops will stay pale). Do not overbake.
  7. Transfer immediately to a wire rack to cool completely.
  8. Make Glaze: Whisk powdered sugar and lime juice until a smooth drizzling consistency is reached. Spoon over cooled cookies and top with fresh lime zest.

💡 Notes & Variations

  • Fresh key limes offer much brighter citrus flavor than bottled lime juice.
  • Keep bake times precise for a soft, melt-in-your-mouth crumb rather than a dry texture.
