📋 Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, toss sliced peaches with 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 tsp cinnamon, nutmeg, lemon juice, and cornstarch until evenly coated.
  3. Transfer peaches into a 2-quart baking dish and bake for 10 minutes.
  4. Meanwhile, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Cut in cold butter using fingertips or a pastry blender until mixture resembles coarse meal. Stir in boiling water just until combined.
  5. Remove hot peaches from oven and drop spoonfuls of dough topping over the fruit.
  6. Whisk 3 tbsp sugar and 1 tsp cinnamon together; sprinkle evenly across the topping.
  7. Bake at 425°F for about 30 minutes until topping is golden brown and filling is bubbling.

💡 Notes & Variations

  • Par-baking the peaches ensures the fruit softens properly without overcooking the biscuit crust.
