Quick Info

Prep: 10m | Cook: 15m | Servings: 12 dumplings

🛒 Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp fine salt
  • 1 cup whole milk (or water)
  • 2 tbsp melted butter or oil

🍳 Equipment

  • Mixing bowl
  • Fork or wooden spoon
  • Dutch oven / Stockpot (with simmering stew or soup)
  • Measuring cups and spoons

📋 Instructions

  1. In a medium bowl, whisk together flour, baking powder, and fine salt.
  2. Pour in milk (or water) and melted butter. Stir gently just until a cohesive, soft dough forms (do not overmix).
  3. Let the dough rest undisturbed for 5–10 minutes so the flour hydrates and baking powder activates.
  4. Drop heaping tablespoons of dough gently into simmering broth or stew, nudging off the spoon with a finger without compressing into tight balls.
  5. Cover tightly with a lid and simmer undisturbed for 12–15 minutes until puffed, cooked through, and fluffy.

💡 Notes & Variations

  • Homemade Baking Powder: To make 1 tsp baking powder from scratch, combine 1/2 tsp cream of tartar, 1/4 tsp baking soda, and 1/4 tsp cornstarch.
  • Dumplings soak up broth as they cook; add an extra splash of broth to your stew prior to dropping in dough.
