🛒 Ingredients

  • 1 small loaf country or sourdough bread
  • 4 oz deli-sliced mozzarella cheese (or shredded)
  • 5 cloves garlic
  • 1/3 cup fresh parsley
  • 2 tbsp olive oil
  • 3 tbsp butter
  • Salt to taste

🍳 Equipment

  • Small food processor
  • Small saucepan
  • Serrated bread knife
  • Aluminum foil
  • Baking sheet

📋 Instructions

  1. Combine garlic cloves, parsley, and olive oil in a small food processor until garlic is finely minced.
  2. Melt butter in a saucepan over medium heat. Add garlic mixture and a pinch of salt; cook 2 minutes without browning. Remove from heat.
  3. Preheat oven to 375°F (190°C) with rack in center position.
  4. Using a serrated knife, cut 1-inch diagonal cross-hatch slices across the bread without cutting through the bottom crust.
  5. Spoon garlic butter into all crevices, then tuck cheese slices into the cuts.
  6. Wrap loaf in foil, tenting another piece over top. Bake for 10 minutes.
  7. Remove top foil layer and bake 10 more minutes until cheese is melted, bubbling, and golden.

💡 Notes & Variations

  • Sourdough gives a tangy contrast, while French or Italian loaves yield a softer crumb.
  • Swap mozzarella for provolone, pepper jack, or fontina for different flavor profiles.
