🛒 Ingredients
- 3 cups all-purpose flour
- 1 tsp salt
- 1 tsp baking powder
- 1/3 cup extra virgin olive oil, vegetable oil, or neutral oil
- 1 cup warm water
🍳 Equipment
- Stand mixer with dough hook (or large mixing bowl)
- Rolling pin
- Large skillet / pan
- Tongs
- Clean kitchen towel
📋 Instructions
- Combine flour, salt, and baking powder in the bowl of a stand mixer fitted with the dough hook; mix dry ingredients until well combined.
- Add oil and warm water with the mixer running at medium speed. Once the mixture comes together into a ball (about 1 minute), decrease speed to low and mix for 1 more minute until smooth.
- Transfer dough to a lightly floured work surface and divide into 16 equal portions.
- Roll each piece into a ball and flatten with the palm of your hand. Cover flattened dough balls with a clean kitchen towel and let rest for 15 minutes (up to 2 hours).
- Heat a large dry pan over medium heat.
- Roll each dough piece on a lightly floured surface into a rough 6–7 inch circle (do not stack uncooked tortillas).
- Place one dough circle into the hot pan and cook for about 1 minute until bubbly and pale golden-brown spots appear on the bottom.
- Flip and cook the other side for 15–20 seconds.
- Remove with tongs and stack immediately in a covered container or zip-top bag to keep soft and steamy.
